This is your "dessert without the dessert" brew: a decaffeinated black tea wrapped in real vanilla. Most of the caffeine is removed while the soft malt and biscuity backbone of the tea are kept intact when decaffeinated gently in a food-safe way.

Decaf via c02 method.

In that canvas is vanilla - usually in pods, pieces or natural vanilla flavour - giving it a custardy sweetness, a toffee note and the warm aroma of a freshly opened bakery. The liquor pours a clear amber liquid when brewed hot; it has a creamy texture.

A splash of milk makes it more creme anglaise, but straight-up it is clean and neat. Over ice it becomes a low-sugar substitute for vanilla iced coffee; With oat or dairy milk it makes an easy tea latte.

Because it has a decaf base, you can have it late in the evening or after dinner - or whenever you want something mellow that still feels naughty. No need to sweeten - vanilla does the hard work - but a dollop of sugar or honey will push the pudding notes a little.

It's simple, versatile and reliably crowd pleasing - a vanilla-loving pantry staple for coffee lovers and caffeine addicts alike.

Brewing

Western style (mug/pot)

2-3 g/1 level tsp per 250 mL.

95 degC water

3 - 4 minutes, then taste; Longer steep creates pudding like sweetness.

Re-steep: 1-2 times; Add 45-60 sec per round.

Gongfu style (gaiwan/teapot)

5-6 g/100 -120 ml.

95 degC water

The first infusion should be 10-15 sec; extend slowly over 3-5 infusions (vanilla softens across rounds)

Iced / cold brew

5-8 g/L cold filtered water.

Refrigerate for 6-8 hrs, strain. For a latte: Cold brew and topped with chilled milk.
