Brewing

Western Style
1/4 cup (2-3 grams) of food for 250 mL of water.
Water temperature: 75-80degC
Let it steep for 3-4 minutes.

Gongfu Style
Usually, 5 g to 10 g of carbohydrates are consumed per 100-120 mL of water.
Water temperature: 75-80degC
First infusion: 20-30 seconds.
Each subsequent infusion increases brewing time slightly.

Iced Tea
Double strength - use hot water.
Let it cool before pouring over ice.
Add fresh cherries or rose petals if desired.

When to Drink
Morning is a mild start to the day.
Mid morning or afternoon as a floral tea.
