Spring florals - orchids and osmanthus - emerge from the dry leaves wrapped in a light bake, suggesting toasted sugar, warm pastry, and sweet almond. Unrolling the leaves reveals buttercream, honeyed grain and roasted yellow stone fruit with a hint of cool mountain-green freshness beneath.

Taste:
Lithe and layered. First sip reveals spring florals and lightly buttered greens followed by baked notes of caramelised cane sugar, toasted barley and almond biscuit. A sweet bake that does not overpower the cup pushes it towards ripe pears, white peaches, and a soft vanilla custard. The later cups have soft herbal tones and a clean, mineral thread.

Mouthfeel:
Silky, poised, medium-bodied - supple across the palate - buoyant. Its light roast smooths the edges for a plush, almost creamy glide with low astringency. Its structure is refined and calm. It tastes well-balanced over several cups of tea.

Finish:
The long, honeyed finish is slightly toasty. Floral sweetness, roasted nuts, and warm pastry lead to a cool, mineral-clean feeling. When the liquor cools, there is a mellow sugarcane note and a mild orchid on the exhale.

Liquor colour:
Clear pale gold - soft and shiny - with longer cups - bright and luminous in the glass.

Lovely with:
Almond cookies, shortbread, lightly salted nuts, fresh fruit - pear, and white peach. Beautiful solo for contemplative sipping. mild cheeses and simple steamed dishes also go well with this wine. A subtle blend of flavors is the base on which to add extra floral elements if desired.

Taiwan Spring Baked Oolong Tea: What is it?
An oolong from the spring harvest that is lightly to medium-baked Taiwanese oolong. After normal oolong processing, the tea is gently baked on charcoal or electric to stabilize aromatics and concentrate sweetness. The result is a floral, slightly toasty cup combining soft pastry-like roasts with spring-fresh florals.

Is it caffeinated?
No, the moderate caffeine found in oolong is typical of the beverage. This gives you a steady lift without the sharpness of strong black tea or coffee.

Are there added flavours or sugars?
No. All the honeyed, nutty, and pastry notes are developed through cultivar, spring picking, and controlled baking steps - no sweeteners or additives!

Does it get reheated?
Yes, reheat gently if the pre-brewed. avoid boiling. Or enjoy cold. Refrigerate immediately and consume within 24 hours.

How do I store it, and how long does it keep?
Seal tightly in a cold, dry, and away from light place. Best within 18-24 months for maximum aroma and flavour. In a sealed tin or high-barrier pouch, the delicate florals and soft baked nuance are preserved.

Couriers Please Shipping is $5.95 for orders under $60 and free for all orders over $60.

Australia Post is always at cost. Orders going to Po Box or Parcel Locker address may be locked in to Australia Post.

What are your transit times?

We dispatch within 24-48 hours (sometimes much faster) and from there we'll see 1-3 days transit to most metro locations within Australia excluding WA and NT which can take a week or so.

We also offer express post which will help speed up the process, at cost with no handling fees. These are always sent as priority and packed first.

Are your teas certified organic?

Up until recently we were certified organic but due to rising administration costs and the difficulty of maintaining certification we've put this on hold for now. Our suppliers and farms remain the same without any change but just now label things are organic, pesticide free or wildcrafted.

This also allows us to maintain our current pricing without any increases which we feel is more important at this time.
